Ingredients

  • 1 lb tagliatelle pasta
  • 1 lb pork shoulder, cut into small cubes
  • 1 lemon, zest and juice
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, cook the tagliatelle pasta according to package instructions. Drain and set aside.

  2. In a separate pan, heat some olive oil over medium heat. Add the pork cubes and cook until browned on all sides. Remove from the pan and set aside.

  3. In the same pan, add the garlic, onion, carrot, and celery. Cook until the vegetables are softened.

  4. Add the pork back to the pan and pour in the lemon juice and zest. Stir to combine.

  5. Pour in the chicken broth and simmer for 1 hour, or until the pork is tender and the sauce has thickened.

  6. Season with salt and pepper to taste.

  7. Toss the cooked tagliatelle pasta with the pork ragù. Sprinkle with Parmesan cheese and garnish with fresh parsley.

  8. Serve hot and enjoy!
