Ingredients

  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1/2 cup kalamata olives
  • 2 cans anchovy fillets, drained
  • dressing ingredients:
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large serving bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, and kalamata olives.

  2. In a separate small bowl, mash the anchovy fillets with a fork until smooth.

  3. Add the olive oil, Dijon mustard, lemon juice, garlic, salt, and pepper to the mashed anchovies. Whisk until well combined.

  4. Pour the dressing over the salad and toss to evenly coat the ingredients.

  5. Serve immediately and enjoy!
