Ingredients

  • 2 zucchinis, sliced
  • 2 yellow squash, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the zucchini, yellow squash, bell peppers, and red onion with olive oil, garlic powder, oregano, salt, and pepper.

  3. Spread the vegetables in a single layer on a baking sheet.

  4. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned, stirring halfway through.

  5. Remove from the oven and garnish with fresh basil.

  6. Serve hot as a main dish or as a side.
