Ingredients
- 2 zucchinis, sliced
- 2 yellow squash, sliced
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, toss the zucchini, yellow squash, bell peppers, and red onion with olive oil, garlic powder, oregano, salt, and pepper.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned, stirring halfway through.
