Serves:

Ingredients

  • 8 large eggs
  • 1 lb ground breakfast sausage
  • 2 cups frozen diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Optional toppings: salsa, sour cream, avocado

Instructions

  1. In a large skillet, brown the breakfast sausage over medium heat until cooked through. Use a slotted spoon to remove the sausage and set aside.

  2. In the same skillet, cook the frozen potatoes until crispy and golden brown. Remove from skillet and set aside with the sausage.

  3. In a mixing bowl, whisk the eggs with salt and pepper to taste. Pour the eggs into the skillet and scramble until cooked through.
