Ingredients

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 tbsp vegetable oil
  • 1 red bell pepper, seeded and sliced
  • 1 yellow bell pepper, seeded and sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 2 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tbsp cornstarch
  • Salt and pepper, to taste

Instructions

  1. In a bowl, whisk together soy sauce, rice vinegar, honey, and cornstarch. Set aside.

  2. Heat vegetable oil in a wok or large skillet over high heat.

  3. Add chicken and stir-fry for 5-7 minutes until browned and cooked through. Remove from the pan and set aside.

  4. Add bell peppers, onion, garlic, and ginger to the pan and stir-fry for 3-4 minutes until tender.

  5. Return the chicken to the pan and add the sauce mixture. Stir-fry for another 2-3 minutes until the sauce has thickened and coated everything well.

  6. Season with salt and pepper to taste. Serve hot.
