  • 2/3 cup coconut flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar substitute
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsweetened almond milk

Instructions

  1. Preheat oven to 350°F. Grease an 8-inch cake pan with coconut oil or unsalted butter.

  2. In a large mixing bowl, cream together the butter and sugar substitute until light and fluffy.

  3. Add eggs, one at a time, and mix well after each addition.

  4. Mix in vanilla extract.

  5. In a separate bowl, combine the coconut flour, baking powder, baking soda, and salt.

  6. Add dry ingredients to wet ingredients and mix well. Slowly add almond milk, mixing until well combined.
