How To Make Diabetic Chicken Stir-Fry Recipe
A healthy and flavorful stir-fry recipe that is perfect for a diabetic-friendly meal.

Ingredients
- 1 lb boneless, skinless chicken breast, sliced into strips
- 2 tbsp vegetable oil
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp grated ginger
- 2 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp honey
- 1 tbsp cornstarch
- Salt and pepper, to taste
Instructions

In a bowl, whisk together soy sauce, rice vinegar, honey, and cornstarch. Set aside.

Heat vegetable oil in a wok or large skillet over high heat.

Add chicken and stir-fry for 5-7 minutes until browned and cooked through. Remove from the pan and set aside.

Add bell peppers, onion, garlic, and ginger to the pan and stir-fry for 3-4 minutes until tender.

Return the chicken to the pan and add the sauce mixture. Stir-fry for another 2-3 minutes until the sauce has thickened and coated everything well.

Season with salt and pepper to taste. Serve hot.
