These crisp and buttery shortbread cookies are made with chickpea flour for a healthy twist.

Ingredients
- 1 cup of chickpea flour
 - 1/2 cup of unsalted butter, softened
 - 1/4 cup of powdered sugar
 - 1 tsp of vanilla extract
 
Instructions
- 
Preheat oven to 350°F.
 - 
In a bowl, cream the butter and powdered sugar until light and fluffy.
 - 
Add chickpea flour and vanilla extract, stirring until well combined.
 - 
Transfer dough to a floured surface and press it into a disc.
 - 
Roll out the dough to 1/4-inch thickness.
 - 
Cut the dough into desired shapes using cookie cutters.
 - 
Transfer the cookies onto a baking tray lined with parchment paper.

Bake for 20-25 minutes or until golden brown.
