A gluten-free alternative to traditional zucchini bread made with nutrient-rich chickpea flour.

Ingredients

  • 2 cups chickpea flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/3 cup honey
  • 1/3 cup coconut oil
  • 1 cup grated zucchini
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.

  2. In a large mixing bowl, combine chickpea flour, baking soda, salt, and cinnamon.

  3. In a separate bowl, whisk together eggs, honey, and coconut oil.

  4. Pour wet ingredients into dry ingredients and mix until well combined.

  5. Fold in grated zucchini and chopped walnuts.

  6. Pour batter into greased loaf pan and bake for 45 minutes or until a toothpick inserted in the center comes out clean.

  7. Let cool before slicing and serving.
