Ingredients

  • 4 Mahi Mahi fillets
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 can (14 oz) coconut milk
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • 1 lime, juiced
  • fresh cilantro, for garnish

Instructions

  1. Season the Mahi Mahi fillets with salt and pepper.

  2. Heat olive oil in a pan over medium-high heat. Add the fillets and cook for 2-3 minutes on each side until golden brown. Remove from the pan and set aside.

  3. In the same pan, sauté the onions and garlic until softened.

  4. Add the curry powder and cook for an additional minute.

  5. Pour in the coconut milk and bring to a simmer. Cook for 5 minutes until slightly thickened.

  6. In a small bowl, mix the cornstarch and water together. Add to the sauce and whisk until fully incorporated.

  7. Return the Mahi Mahi fillets to the pan and add the lime juice. Cook for an additional 2-3 minutes until fully cooked and the sauce has thickened.

  8. Garnish with fresh cilantro and serve hot with rice or vegetables.
