Ingredients

  • 10 oz. white fish fillet
  • 1 cup shredded carrots
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • 1/4 cup panko breadcrumbs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F.

  2. Cut the white fish fillet into small pieces and pulse in a food processor.

  3. Transfer to a mixing bowl. Add shredded carrots, chopped onion, cilantro, garlic powder, salt, black pepper, and egg. Mix well.

  4. Shape the mixture into 8 fish cakes. Roll in panko breadcrumbs.

  5. Heat olive oil in a non-stick skillet over medium-high heat. Add the fish cakes and cook for 2 minutes on each side until golden brown.

  6. Transfer the fish cakes to a baking sheet and bake in the oven for 10 minutes.
