How To Make Carrot Fish Cakes Recipe
A crispy, healthy and tasty fish cake with shredded carrot

Ingredients
- 10 oz. white fish fillet
- 1 cup shredded carrots
- 1/4 cup chopped onion
- 1/4 cup chopped cilantro
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/4 cup panko breadcrumbs
- 2 tbsp olive oil
Instructions

Preheat oven to 400°F.

Cut the white fish fillet into small pieces and pulse in a food processor.

Transfer to a mixing bowl. Add shredded carrots, chopped onion, cilantro, garlic powder, salt, black pepper, and egg. Mix well.

Shape the mixture into 8 fish cakes. Roll in panko breadcrumbs.

Heat olive oil in a non-stick skillet over medium-high heat. Add the fish cakes and cook for 2 minutes on each side until golden brown.

Transfer the fish cakes to a baking sheet and bake in the oven for 10 minutes.
