How To Make Cauliflower Fish Cakes Recipe

Ingredients

  • 1 medium cauliflower head, chopped
  • 2 cans of tuna, drained
  • 1/3 cup of breadcrumbs
  • 2 tbsp of chopped fresh parsley
  • 1 egg, beaten
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 2 tbsp of olive oil

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Steam cauliflower for 10 minutes or until tender; drain well and mash.

  3. In a bowl, mix mashed cauliflower with tuna, breadcrumbs, parsley, egg, salt, and pepper.

  4. Form mixture into patties and place on a baking sheet lined with parchment paper.

  5. Brush both sides of the patties with olive oil and bake for 15-20 minutes until golden brown.
