Ingredients
- 1 block of tofu, cubed
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large skillet over medium heat. Add onion and garlic, and cook until softened.

Add tofu to the skillet and cook until golden brown on all sides, stirring occasionally.

Add bell pepper and carrot to the skillet and sauté for a few minutes until slightly tender.

In a separate bowl, whisk together coconut milk, red curry paste, soy sauce, brown sugar, salt, and pepper.

Pour the coconut curry sauce over the tofu and vegetables in the skillet. Stir well to combine.

Simmer the curry for about 10 minutes, or until the tofu and vegetables are cooked through and the flavors are well blended.

Serve the coconut curry tofu over steamed rice or with naan bread. Garnish with fresh cilantro.
