How To Make Beetroot Fish Cakes Recipe
These crispy and flavorful fish cakes are made with fresh beetroot, mashed potatoes, and tender cod.

Ingredients
- 1 lb cod fillets, cooked and flaked
- 2 cups mashed potatoes
- 1/2 cup grated beetroot
- 1/4 cup chopped green onions
- 1/4 cup chopped parsley
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 egg, beaten
- 1 cup breadcrumbs
- 1/4 cup vegetable oil

In a large mixing bowl, combine the cooked cod, mashed potatoes, grated beetroot, green onions, parsley, garlic powder, smoked paprika, salt, and black pepper. Mix well.

Form the mixture into small patties, about 2 inches in diameter.

Dip each patty into the beaten egg, then coat with breadcrumbs.

Heat the vegetable oil in a large skillet over medium heat.
