How To Make Healthy Salad Niçoise

Ingredients
- 8 small red potatoes, halved
- 4 large eggs
- 8 oz green beans, trimmed
- 2 cups cherry tomatoes, halved
- 1 cup mixed olives
- 1/2 red onion, thinly sliced
- 4 cups mixed salad greens
- 2 cans tuna, drained
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions

Place the potatoes in a pot of salted water and bring to a boil. Cook until tender, about 10 minutes. Drain and set aside.

In a separate pot, place the eggs and cover with water. Bring to a boil, then reduce heat and simmer for 8 minutes. Drain and cool under cold water. Peel and set aside.

In the same pot used for the eggs, blanch the green beans for 3 minutes. Drain and plunge into ice water to stop the cooking process. Drain again.

In a large bowl, combine the cooked potatoes, green beans, cherry tomatoes, olives, red onion, and salad greens.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

Drizzle the dressing over the salad and toss to combine.

Divide the salad onto 4 plates. Top each plate with a quarter of the tuna and a sliced hard-boiled egg.

Serve immediately and enjoy the healthy and delicious Niçoise salad!
