How To Make Healthy Salad Niçoise

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Ingredients

  • 8 small red potatoes, halved
  • 4 large eggs
  • 8 oz green beans, trimmed
  • 2 cups cherry tomatoes, halved
  • 1 cup mixed olives
  • 1/2 red onion, thinly sliced
  • 4 cups mixed salad greens
  • 2 cans tuna, drained
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Place the potatoes in a pot of salted water and bring to a boil. Cook until tender, about 10 minutes. Drain and set aside.

  2. In a separate pot, place the eggs and cover with water. Bring to a boil, then reduce heat and simmer for 8 minutes. Drain and cool under cold water. Peel and set aside.

  3. In the same pot used for the eggs, blanch the green beans for 3 minutes. Drain and plunge into ice water to stop the cooking process. Drain again.

  4. In a large bowl, combine the cooked potatoes, green beans, cherry tomatoes, olives, red onion, and salad greens.

  5. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.

  6. Drizzle the dressing over the salad and toss to combine.

  7. Divide the salad onto 4 plates. Top each plate with a quarter of the tuna and a sliced hard-boiled egg.

  8. Serve immediately and enjoy the healthy and delicious Niçoise salad!
