- 1 baguette
- 1 can of tuna, drained
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of Kalamata olives, chopped
- 2 hard-boiled eggs, chopped
- 2 cups of mixed greens
- 1/4 cup of red onion, thinly sliced
- 2 tbsp of capers
- 2 tbsp of extra virgin olive oil
- 1 tbsp of lemon juice
- Salt and pepper to taste

Slice the baguette lengthwise, leaving one side attached to create a pocket.

In a bowl, mix together the tuna, cherry tomatoes, olives, hard-boiled eggs, mixed greens, red onion, capers, olive oil, lemon juice, salt, and pepper.
