Ingredients

  • 1 baguette
  • 1 can of tuna, drained
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of Kalamata olives, chopped
  • 2 hard-boiled eggs, chopped
  • 2 cups of mixed greens
  • 1/4 cup of red onion, thinly sliced
  • 2 tbsp of capers
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp of lemon juice
  • Salt and pepper to taste

Instructions

  1. Slice the baguette lengthwise, leaving one side attached to create a pocket.

  2. In a bowl, mix together the tuna, cherry tomatoes, olives, hard-boiled eggs, mixed greens, red onion, capers, olive oil, lemon juice, salt, and pepper.

  3. Spoon the tuna mixture into the hollowed-out baguette.

  4. Serve immediately and enjoy!
