Enjoy this perfect raspberry mimosa and mocktail on Valentine’s Day or even on normal days! It’s easy to make and will have you asking for another glass.

Ingredients

For Raspberry Mimosa:

  • 1tbspclear corn syrup,or honey
  • 1tbspcoarse sugar,or sprinkles
  • 6ozpomegranate juice,or cran-raspberry juice, frozen into ice cubes
  • 2ozraspberry liqueur,such as Chambord
  • 10ozsparkling wine
  • raspberries,or pomegranate arils or fresh cranberries, optional for garnish

For Mocktail Version:

  • 10ozlemon-lime soda,or ginger ale
  • 8ozcran-raspberry juice,or pomegranate juice, frozen into ice cubes

Instructions

  1. Rub the very edge of the glasses with a thin layer of corn syrup.

  2. Dip the edges into the sugar or sprinkles.

  3. Fill the ice cube trays with pomegranate juice, then freeze.

  4. Add the raspberry liqueur and ice cubes to champagne flutes.

  5. Top with sparkling wine.

  6. Garnish with raspberries or other desired toppings, serve, enjoy!

Mocktail Version:

  1. Fill the glasses with ice cubes.

  2. Top with the lemon-lime soda.

  3. Garnish with pomegranate arils or other desired toppings, serve, enjoy!
