How To Make Penicillin Cocktail

This penicillin cocktail makes the perfect cure-all glass! It’s a scotch-based cocktail packed with sweet honey and ginger for a lip-smacking drink.

For Honey-Ginger Syrup:

  • ½cuphoney
  • ½cupwater
  • 1ginger root,(3-inch piece), peeled and sliced

For Penicillin Cocktail:

  • 2ozblended Scotch
  • ¾ozlemon juice,fresh squeezed
  • ice
  • ¼ozIslay Scotch
  • candied ginger,or lemon peel for garnish, optional


  1. Add the honey, water, and ginger root to a pot and bring to a boil.

  2. Reduce the heat and simmer for 5 minutes, then allow the syrup to cool. Strain and store in the fridge.

  3. Pour the blended Scotch, lemon juice, and honey-ginger syrup into a shaker. Add the ice, shake, and strain into a rocks glass with ice.

  4. Float the Islay scotch on top by pouring it gently over the back of a spoon.

  5. Garnish with candied ginger, lemon peel, or both. Enjoy!
