Ingredients

  • 8lime,rinds, halved and squeezed, juice reserved for another use
  • 1cupsugar
  • ice
  • 2ozwhite rum
  • 1ozlime juice
  • 1ozlime rind simple syrup
  • 4mint leaves,fresh plus more for garnish
  • ginger beer,to taste
  • 1lime,slice for garnish

Instructions

  1. In a medium bowl, combine the lime rinds and sugar. Toss to coat the rinds with the sugar, then cover.

  2. Let it sit stirring every 45 minutes for about 4 hours, or until the sugar is completely dissolved and there’s syrup in the bottom of the bowl.

  3. Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much liquid as possible.

  4. Store in an airtight container in the refrigerator for up to 3 months.

  5. In a cocktail shaker filled with ice, combine the rum, lime juice, simple syrup, and mint leaves. Shake vigorously for 20 seconds.

  6. Strain into a glass filled with ice and top with ginger beer.

  7. Garnish with the slice of lime and mint leaves.
