Ingredients

  • 2 large beetroots, peeled and chopped
  • 1 cup Greek yogurt
  • 1 tbsp fresh tarragon, chopped
  • 1 tsp lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. In a blender, puree the beetroot until smooth. Strain the puree to remove any solids. Set aside.

  2. In a separate bowl, mix together the Greek yogurt, tarragon, lemon juice, salt, and black pepper. Pour the mixture into an ice cube tray and freeze until solid.

  3. When ready to serve, pour the beetroot puree into shot glasses. Add a tarragon yogurt ice cube to each glass.

  4. Serve immediately and enjoy!
