Smoked Salmon and Dill Ravioli with Lemon Cream Sauce Recipe

How To Make Smoked Salmon and Dill Ravioli with Lemon Cream Sauce

Delicate pillows of smoked salmon and dill flavored pasta filled with creamy ricotta cheese, served in a tangy lemon cream sauce.

Serves:

Ingredients

  • 2 cups of all-purpose flour
  • 3 eggs
  • 1/4 cup of water
  • 1/2 tbsp of salt
  • 200g smoked salmon
  • 1/4 cup of fresh dill, chopped
  • 200g ricotta cheese
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • zest of 1 lemon
  • 2 tbsp of butter

Instructions

  1. In a large bowl, mix the flour and salt. Form a well in the center and crack in the eggs. Mix until well combined. Add water and knead the dough until smooth and elastic. Wrap in plastic and rest for 30 minutes.
  2. In a small bowl, mix the smoked salmon, dill, and ricotta cheese. Season with salt.
  3. Roll out the pasta dough into thin sheets. Cut into 3-inch circles. Place a teaspoon of the salmon filling in the center of each circle. Brush the edges with water and fold over, pressing to seal.
  4. Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface.
  5. In a separate pan, melt the butter and add the lemon zest. Add the heavy cream and Parmesan cheese. Cook until thickened. Season with salt and black pepper.
  6. Serve the ravioli with the lemon cream sauce.
