How To Make Spotted Dick

This sweet, delectable dessert is the perfect ender to any and every heavy meal! In fact, it’s great even as a stand-alone snack. Serves:

Ingredients

  • 200g self-raising flour
  • 100g shredded suet
  • 75g caster sugar
  • 100g currants
  • Zest of 1 lemon
  • 1 egg, beaten
  • 150ml milk

Instructions

  1. In a mixing bowl, combine the flour, suet, sugar, currants, and lemon zest.

  2. Gradually add the beaten egg and milk, stirring until a soft dough forms.

  3. Transfer the dough to a greased pudding basin and smooth the top.

  4. Cover the basin with a greased sheet of parchment paper and secure with a string or rubber band.

  5. Place the basin in a large pot and add enough boiling water to come halfway up the sides of the basin.

  6. Cover the pot and steam the pudding over medium-low heat for 1 hour.

  7. Carefully remove the pudding from the pot and let it cool for a few minutes before turning it out onto a serving plate.

  8. Serve the spotted dick warm with custard sauce.
