Ingredients

  • 4 large baking potatoes
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated cheddar cheese
  • 4 tbsp sour cream
  • 4 green onions, chopped
  • 4 slices cooked bacon, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the potatoes and pat them dry. Prick each potato several times with a fork.

  3. Rub each potato with olive oil, salt, and black pepper.

  4. Place the potatoes directly on the oven rack and bake for 60-70 minutes, or until they are tender when pierced with a fork.

  5. Remove the potatoes from the oven and let them cool for a few minutes.

  6. Slice each potato in half lengthwise and fluff the flesh with a fork.

  7. Top each potato half with grated cheddar cheese, sour cream, chopped green onions, and crumbled bacon.

  8. Serve immediately and enjoy!
