How To Make Marinated Beetroot with Grilled Goat’s Cheese

- 4 medium-sized beetroots, peeled and sliced
- 200g of goat’s cheese, sliced
- 3 tablespoons of extra virgin olive oil
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of honey
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt, and pepper.

Add the sliced beetroots to the marinade and toss to coat evenly. Let it marinate for at least 10 minutes.

Preheat a grill or grill pan over medium heat.

Grilled the marinated beetroot slices for about 4-5 minutes on each side, until tender and lightly charred.

Remove the beetroot slices from the grill and transfer them to a serving platter.

Top each beetroot slice with a slice of goat’s cheese and garnish with fresh basil leaves.
