How To Make Home-Cured Streaky Bacon

Pork is one of the most commonly cooked meats in the world and we’ve decided to put our spin into these minimal yet tasty pork recipes that will have you looking forward to every bite.

Total: 1 hour and 45 minutes

Serves:

Ingredients

  • 1 kg pork belly, skin on
  • 4 tbsp coarse sea salt
  • 2 tbsp brown sugar
  • 2 tsp black pepper

Instructions

  1. Score the skin of the pork belly with a sharp knife, making shallow cuts in a diamond pattern.

  2. Mix together the salt, brown sugar, and black pepper.

  3. Rub the salt mixture all over the pork belly, including the skin.

  4. Place the pork belly in a large ziplock bag and refrigerate for 7 days, flipping it over every day to evenly distribute the cure.

  5. After 7 days, remove the pork belly from the bag and rinse off any excess cure under cold water. Pat dry with paper towels.

  6. Preheat your oven to 200°C (180°C fan).

  7. Place the pork belly on a rack in a roasting tray, with the skin side up.

  8. Roast in the preheated oven for 1.5 hours, or until the internal temperature reaches 65°C.

  9. Remove from the oven and let it cool for a few minutes before slicing.

  10. Cut into thin slices and serve as desired.
