How To Make Easy lamb hotpot

Ingredients
- 800g lamb shoulder, diced
- 2 onions, sliced
- 4 carrots, sliced
- 2 leeks, sliced
- 2 cloves of garlic, minced
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 bay leaf
- 1 sprig of rosemary
- 600ml beef or vegetable stock
- Salt and pepper, to taste
- 500g potatoes, thinly sliced
Instructions

Preheat the oven to 160°C (320°F).

In a large ovenproof dish, layer the lamb, onions, carrots, leeks, and garlic.

In a small bowl, mix together the tomato paste and Worcestershire sauce. Spread this mixture over the lamb and vegetables.

Add the bay leaf, rosemary sprig, and stock to the dish. Season with salt and pepper.

Arrange the sliced potatoes on top, overlapping slightly.

Cover the dish with foil and bake in the preheated oven for 1 hour.

Remove the foil and increase the oven temperature to 200°C (400°F). Bake for an additional 30 minutes, or until the potatoes are golden and crispy.

Serve the lamb hotpot hot, garnished with fresh herbs if desired.
