  • 1 cup almond flour
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped dates
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup rum (optional)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 6-inch round cake pan.

  2. In a large mixing bowl, combine the almond flour, gluten-free all-purpose flour, brown sugar, dried cranberries, chopped walnuts, chopped dates, cinnamon, baking powder, nutmeg, and salt.

  3. In a separate bowl, whisk together the eggs, almond milk, melted coconut oil, vanilla extract, and rum (if using).

  4. Pour the wet ingredients into the dry ingredients and mix until well combined.

  5. Transfer the batter into the greased cake pan and smooth the top.

  6. Bake in the preheated oven for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  8. Once the cake is cooled, you can decorate it with icing, powdered sugar, or your favorite gluten-free decorations.
