  • 1 cup of Arborio rice
  • 2 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1/4 cup of butter
  • 1/4 cup of brown sugar
  • 1/2 teaspoon of vanilla extract
  • Pinch of salt
  • Whipped cream, for serving
  • Butterscotch sauce, for serving

Instructions

  1. In a medium saucepan, combine the rice, milk, granulated sugar, and salt. Bring to a boil over medium heat, then reduce the heat to low. Simmer, stirring occasionally, for 25-30 minutes or until the rice is tender and the mixture has thickened.

  2. In a separate small saucepan, melt the butter over medium heat. Cook, stirring constantly, until the butter turns a deep golden brown color and has a nutty aroma, about 5-7 minutes. Remove from heat and stir in the brown sugar until melted and smooth.

  3. Slowly pour the burnt butterscotch mixture into the rice pudding, stirring constantly to combine. Stir in the vanilla extract.

  4. Remove from heat and let cool slightly. Serve warm, topped with whipped cream and drizzled with butterscotch sauce.
