How To Make Kelly’s Butterscotch Pudding

Ingredients
- 1/2 cup packed brown sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 3/4 cups milk
- 3 large egg yolks, lightly beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Whipped cream, for serving (optional)
Instructions

In a medium saucepan, combine the brown sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Reduce the heat to low and cook for 2 minutes, stirring constantly.

Remove the saucepan from the heat. Gradually whisk about 1/2 cup of the hot mixture into the egg yolks, then pour the egg mixture back into the saucepan.

Cook over medium heat, stirring constantly, for 2 more minutes. Remove from the heat and stir in the butter and vanilla extract until the butter melts.

Pour the pudding into individual serving dishes and cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.

Refrigerate for at least 2 hours, or until chilled and set.

Serve the butterscotch pudding chilled, topped with whipped cream if desired.
