  • 2 cups elderberries
  • 1 cup almond meal
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1 ready-to-use pie crust
  • Whipped cream or vanilla ice cream (optional, for serving)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the elderberries, almond meal, flour, sugar, melted butter, vanilla extract, lemon zest, and salt. Mix well.

  3. Place the pie crust in a pie dish and press it firmly against the edges.

  4. Pour the elderberry mixture into the pie crust, spreading it evenly.

  5. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.

  6. Remove from the oven and let it cool for at least 10 minutes before serving.

  7. Serve warm with whipped cream or vanilla ice cream, if desired.
