Ingredients

  • 1 goose, cleaned and prepared (4-5 lbs)
  • 1 cup elderberries
  • 1/2 cup red wine
  • 1/2 cup chicken broth
  • 2 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 325°F.

  2. Season the goose inside and out with salt and pepper.

  3. Place the goose in a roasting pan and bake for 2 hours, or until the internal temperature reaches 165°F.

  4. While the goose cooks, mix the elderberries, red wine, and chicken broth in a small saucepan and cook until the berries are soft and the sauce is thickened.

  5. Strain the sauce through a fine-mesh strainer and stir in the butter.

  6. Serve the goose with the elderberry sauce on the side.
