Ingredients
- 2 cups pumpkin, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 green chilies, chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 tablespoon oil
- Salt to taste
- 1 tablespoon sugar
- Juice of 1 small lemon
- Fresh cilantro, for garnish
Instructions

Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.

Add chopped onion, minced garlic, grated ginger, and green chilies. Sauté until onions turn translucent.

Add diced pumpkin, turmeric powder, red chili powder, and salt. Mix well to coat the pumpkin with spices.

Cover the pan and cook for about 15-20 minutes, or until the pumpkin is soft and cooked through, stirring occasionally.

Mash the cooked pumpkin slightly to achieve the desired consistency.

Stir in sugar and lemon juice. Cook for another 2-3 minutes.

Remove from heat and let it cool down.
