- 2 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- For the topping:
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ¼ cup milk
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a bowl, combine the raspberries, blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Mix well to coat the berries.
-
Transfer the berry mixture to a 9-inch pie dish or similar baking dish, spreading it out evenly.
-
In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
-
Add the cold cubed butter to the dry mixture and use your fingers or a pastry cutter to cut it into the flour until it resembles coarse crumbs.
-
Pour in the milk and stir until the dough just comes together.
-
Drop spoonfuls of the biscuit dough over the berry mixture, covering the top as evenly as possible.
-
Bake for 35-40 minutes, or until the topping is golden brown and the berries are juicy and bubbling.
-
Remove from the oven and let cool for a few minutes before serving.
-
Serve warm with a scoop of vanilla ice cream or whipped cream.
