How To Make Blueberry Cobbler
Top a delicious Blueberry Cobbler with vanilla ice cream or whipped cream for a filling summer dessert! You can also use other berries or even apples.
Preheat oven to 375 degrees F and lightly grease an 8×8-inch baking dish.
In a large bowl, stir together blueberries, ¼ cup of flour, and 1 cup of sugar. Pour into prepared baking dish.
In another large bowl, stir together remaining 1 cup of flour, ¼ cup of sugar, baking powder, and cinnamon. Add egg, milk, and canola oil. Stir until completely combined. The batter will be thick.
Drop batter over the blueberries by tablespoonfuls, covering as much of the fruit as possible.
Bake for 35 to 40 minutes, or until topping is golden brown and the blueberries are thickened and bubbly.
Let cool for 10 minutes before serving. Top with vanilla ice cream or whipped cream, and enjoy!
Note that when covering the blueberries with batter, it won’t cover the fruits completely, hence the instruction to cover as much as possible.
