Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes

Serves:

Ingredients

  • 4 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar (for topping)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a mixing bowl, gently toss blackberries with granulated sugar and lemon juice until well coated. Transfer to a baking dish.

  3. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  4. In a small bowl, combine the milk and vanilla extract. Pour into the flour mixture and stir until just combined and a dough forms.

  5. Drop spoonfuls of the dough onto the blackberries, covering the fruit as evenly as possible.

  6. Sprinkle the turbinado sugar evenly over the dough.

  7. Bake for 30 minutes or until the cobbler topping is golden brown and the blackberries are bubbling.

  8. Remove from the oven and let it cool for a few minutes before serving.

  9. Serve warm with vanilla ice cream or whipped cream.
