Serves:
Ingredients
- 4 cups fresh blackberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon turbinado sugar (for topping)
Instructions
-
Preheat oven to 375°F (190°C).
-
In a mixing bowl, gently toss blackberries with granulated sugar and lemon juice until well coated. Transfer to a baking dish.
-
In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
-
In a small bowl, combine the milk and vanilla extract. Pour into the flour mixture and stir until just combined and a dough forms.
-
Drop spoonfuls of the dough onto the blackberries, covering the fruit as evenly as possible.
-
Sprinkle the turbinado sugar evenly over the dough.
-
Bake for 30 minutes or until the cobbler topping is golden brown and the blackberries are bubbling.
-
Remove from the oven and let it cool for a few minutes before serving.
-
Serve warm with vanilla ice cream or whipped cream.
