How To Make Lemon Cheesecake

Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 1/2 cups cream cheese, softened
- 1 cup granulated sugar
- 2 tsp lemon zest
- 1/4 cup lemon juice
- 3 eggs
- 1/2 cup sour cream
- 1/4 cup all-purpose flour
Instructions

Preheat the oven to 325°F (163°C).

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large mixing bowl, beat the cream cheese until smooth. Add the sugar and continue to beat until well combined.

Add the lemon zest, lemon juice, eggs, sour cream, and flour to the cream cheese mixture. Mix until everything is fully incorporated and smooth.

Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.

Place the pan in the preheated oven and bake for 40 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for about 1 hour.

Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight, before serving.

To serve, run a knife around the edges of the pan to loosen the cheesecake. Remove the springform pan sides. Slice and enjoy!
