Serves:
Ingredients
- 200g dates, pitted and chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- Powdered sugar, for dusting (optional)
Instructions
-
Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
-
In a small bowl, combine the chopped dates, baking soda, and boiling water. Let it sit for 10 minutes to soften the dates.
-
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
-
Beat in the eggs, one at a time, followed by the vanilla extract.
-
In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
-
Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Begin and end with the dry ingredients. Mix until just combined.
-
Pour the batter into the greased cake pan and smooth the top.
-
Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
-
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
-
Once cooled, dust with powdered sugar, if desired, before serving.
