How To Make Udon Noodle Soup

Ingredients
- 8 cups of vegetable or chicken broth
- 1 tablespoon of soy sauce
- 2 teaspoons of mirin
- 1 teaspoon of sesame oil
- 1 tablespoon of vegetable oil
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 4 green onions, sliced
- 8 ounces of udon noodles
- Assorted toppings (such as sliced mushrooms, tofu, spinach, sliced carrots, and boiled eggs)
Instructions

In a large pot, heat vegetable or chicken broth over medium heat.

Stir in soy sauce, mirin, and sesame oil.

In a separate pan, heat vegetable oil and sauté garlic, ginger, and green onions for 2 minutes.

Add the sautéed mixture to the broth and let it simmer for 15 minutes.
