Ingredients

  • 8 cups of vegetable or chicken broth
  • 1 tablespoon of soy sauce
  • 2 teaspoons of mirin
  • 1 teaspoon of sesame oil
  • 1 tablespoon of vegetable oil
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • 4 green onions, sliced
  • 8 ounces of udon noodles
  • Assorted toppings (such as sliced mushrooms, tofu, spinach, sliced carrots, and boiled eggs)

Instructions

  1. In a large pot, heat vegetable or chicken broth over medium heat.

  2. Stir in soy sauce, mirin, and sesame oil.

  3. In a separate pan, heat vegetable oil and sauté garlic, ginger, and green onions for 2 minutes.

  4. Add the sautéed mixture to the broth and let it simmer for 15 minutes.

  5. Cook udon noodles according to package instructions, then drain and rinse.

  6. Divide cooked udon noodles among serving bowls.

  7. Ladle the hot broth over the noodles, ensuring all ingredients are covered.

  8. Add desired toppings to each bowl.

  9. Serve the udon noodle soup hot and enjoy!
