Ingredients

  • 8 egg roll wrappers
  • 1 cup corned beef, cooked and shredded
  • 1/2 cup sauerkraut
  • 1/2 cup Swiss cheese, shredded
  • 1/4 cup Thousand Island dressing
  • 1 egg, beaten
  • Oil for frying

Instructions

  1. Lay an egg roll wrapper on a clean surface. Place a spoonful of corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing in the center.

  2. Fold the sides of the wrapper towards the center, then roll from the bottom, sealing the top with the beaten egg.

  3. Repeat with the remaining wrappers and filling.

  4. Heat oil in a deep skillet or fryer to 350°F (175°C). Carefully place the filled egg rolls in the hot oil and fry until golden brown, about 3-4 minutes per side.

  5. Remove from the oil and drain on a paper towel-lined plate.

  6. Serve hot with additional Thousand Island dressing for dipping.
