Ingredients

  • 1 (3-4 lb) standing rib roast
  • 4 cups water
  • 1/4 cup kosher salt
  • 1/4 cup brown sugar
  • 4 garlic cloves, minced
  • 2 sprigs rosemary
  • 1 tsp black peppercorns

Instructions

  1. In a large pot, combine water, kosher salt, brown sugar, minced garlic, rosemary sprigs, and black peppercorns. Stir until salt and sugar dissolve.

  2. Place the standing rib roast in a large resealable bag and pour the brine into the bag, ensuring the roast is fully submerged. Seal the bag and refrigerate for at least 8 hours or overnight.

  3. Preheat the oven to 325°F (160°C).

  4. Remove the roast from the brine, discard the brine, and pat the roast dry with paper towels.

  5. Place the roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast, avoiding any bones.

  6. Roast the beef in the preheated oven for about 20 minutes per pound, or until the internal temperature reaches your desired level of doneness (145°F/63°C for medium-rare, 160°F/71°C for medium).

  7. Once cooked, remove the roast from the oven and let it rest for 15-20 minutes before carving.

  8. Slice the roast and serve hot.
