How To Make Sinigang na Bangus (Filipino Milkfish in Tamarind Broth)

Ingredients

  • 2 medium-sized bangus (milkfish), cleaned and cut into serving pieces
  • 1 small onion, quartered
  • 2 tomatoes, quartered
  • 1 thumb-sized ginger, sliced
  • 4 cups water
  • 2-3 pieces tamarind (sampaloc) or 2 tablespoons tamarind powder
  • 1 medium-sized radish, sliced
  • 1 medium-sized eggplant, sliced
  • 1 bunch kangkong (water spinach)
  • Fish sauce, to taste
  • Salt and pepper, to taste

Instructions

  1. In a pot, combine the onion, tomatoes, ginger, and water. Bring to a boil.

  2. Once boiling, add the bangus (milkfish) and tamarind. Simmer for 10 minutes or until the fish is cooked.

  3. Add the radish and eggplant. Cook for another 5 minutes or until the vegetables are tender.

  4. Add the kangkong (water spinach) and season with fish sauce, salt, and pepper to taste. Cook for about 2 minutes.

  5. Serve hot with steamed rice.
