How To Make Sinigang na Bangus (Filipino Milkfish in Tamarind Broth)

Ingredients
- 2 medium-sized bangus (milkfish), cleaned and cut into serving pieces
- 1 small onion, quartered
- 2 tomatoes, quartered
- 1 thumb-sized ginger, sliced
- 4 cups water
- 2-3 pieces tamarind (sampaloc) or 2 tablespoons tamarind powder
- 1 medium-sized radish, sliced
- 1 medium-sized eggplant, sliced
- 1 bunch kangkong (water spinach)
- Fish sauce, to taste
- Salt and pepper, to taste
Instructions

In a pot, combine the onion, tomatoes, ginger, and water. Bring to a boil.

Once boiling, add the bangus (milkfish) and tamarind. Simmer for 10 minutes or until the fish is cooked.

Add the radish and eggplant. Cook for another 5 minutes or until the vegetables are tender.

Add the kangkong (water spinach) and season with fish sauce, salt, and pepper to taste. Cook for about 2 minutes.

Serve hot with steamed rice.
