Ingredients

  • 3-pound chuck roast
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef broth

Instructions

  1. Preheat oven to 325°F.

  2. Season chuck roast with salt, pepper, paprika, thyme, and rosemary.

  3. Heat a Dutch oven over medium-high heat and add oil.

  4. Brown the roast on all sides, then set it aside.

  5. Add onions, garlic, carrots and celery to the pot and cook for 5 mins.

  6. Add beef broth to the pot and mix it with the veggies.

  7. Place the roast back into the Dutch oven and cook it in the oven for 3 hours.

  8. Serve and enjoy your Dutch Oven Pot Roast Recipe.
