Ingredients

  • 1 lb split peas
  • 6 cups water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 smoked sausage, sliced
  • 1 bay leaf
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. Rinse the split peas and add them to a large pot with water.

  2. Add chopped onion, carrots, celery, and garlic.

  3. Bring the pot to a boil and then reduce the heat to a simmer.

  4. Add sliced smoked sausage and bay leaf to the pot.

  5. Cover and simmer for 1 hour or until peas are tender.

  6. Remove bay leaf and puree soup until smooth.

  7. Season with salt and pepper to taste.

  8. Serve with crusty bread.
