Ingredients

  • 4 New York Strip steaks, 12 oz each
  • Salt and pepper
  • 2 tbsp canola oil
  • 4 tbsp unsalted butter, divided
  • 4 sprigs fresh thyme
  • 2 garlic cloves, minced
  • 1-2 tbsp beef broth
  • Parsley, chopped, for garnish

Instructions

  1. Preheat oven to 400°F.

  2. Season steaks generously with salt and pepper.

  3. Heat canola oil in a large oven-safe skillet over high heat.

  4. Add steaks and sear for 2-3 minutes on each side until well-browned.

  5. Add 2 tbsp butter, fresh thyme, and minced garlic to the skillet.

  6. Baste steaks with the buttery thyme mixture until the steaks are cooked to your liking.

  7. Transfer skillet to the oven and cook for 3-6 minutes for medium-rare to medium doneness.

  8. Remove the skillet from the oven and place steaks on a large plate to rest.

  9. Add 2 tbsp of butter and beef broth to the skillet and whisk until the sauce is smooth and glossy.

  10. Spoon the sauce over the steaks and garnish with chopped parsley.
