How To Make Bojangles’ Cajun Pintos Recipe

A spicy cajun side dish of pinto beans in a flavorful sauce.

Ingredients

  • 2 cans of pinto beans, drained and rinsed
  • 1/2 cup of diced onions
  • 2 cloves of garlic, minced
  • 1/2 bell pepper, diced
  • 1 tsp of cajun seasoning
  • 1/2 tsp of smoked paprika
  • 1/2 tsp of thyme leaves
  • 1/2 tsp of oregano
  • 1/2 tsp of black pepper
  • 1/4 tsp of cayenne pepper
  • 1/4 tsp of salt
  • 1 cup of water
  • 1 tbsp of vegetable oil

Instructions

  1. Heat the oil in a large skillet over medium-high heat.

  2. Add the onions and bell pepper, and sauté until the onions are soft and translucent.

  3. Add the garlic, cajun seasoning, smoked paprika, thyme, oregano, black pepper, and cayenne pepper and stir for 30 seconds.

  4. Add the drained pinto beans and stir to coat them with the seasoning mixture.

  5. Pour in the water, and stir.

  6. Bring the mixture to a boil, then lower the heat to medium, and let it simmer for 20 minutes.

  7. Taste and adjust seasonings if necessary.

  8. Serve and enjoy!
