  • 1 pre-made pie crust
  • 3 egg yolks
  • 1/4 cup cornstarch
  • 1 1/2 cups water
  • 1 cup sugar
  • 1/2 cup lemon juice
  • 1 tbsp lemon zest
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 6 tbsp sugar

Instructions

  1. Preheat oven to 350°F.

  2. Bake pie crust according to package directions and allow it to cool.

  3. In a medium saucepan, whisk together egg yolks, cornstarch, water, sugar, lemon juice, and zest.

  4. Cook over medium heat, whisking constantly, until mixture thickens and boils.

  5. Boil for 1 minute, then remove from heat and pour into the cooled pie crust.

  6. In a large bowl, beat egg whites and cream of tartar until frothy.

  7. Gradually add in sugar, beating until stiff peaks form.

  8. Spoon meringue onto lemon filling, making sure to spread it to the edges to seal the pie.

  9. Bake for 15 minutes or until meringue is lightly browned.

  10. Allow pie to cool before serving.
