Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp cornstarch
- 1/4 cup water
Instructions

Season the chicken breasts with salt and pepper.

In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the sliced bell peppers, zucchini, yellow squash, cherry tomatoes, garlic, oregano, basil, and thyme. Cook until the vegetables are tender-crisp.

In a small bowl, whisk together chicken broth, soy sauce, honey, cornstarch, and water. Pour the sauce over the vegetables in the skillet.

Return the chicken to the skillet and simmer for 5 minutes, until the sauce has thickened and the chicken is heated through.

Serve the saucy chicken and vegetables over steamed rice or pasta.
