How To Make Chicken Fried Rice

Ingredients
- 2 cups cooked rice
- 2 chicken breasts, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped
Instructions

Heat oil in a large skillet or wok over medium-high heat. Add garlic and ginger, sauté for 1 minute.

Add diced chicken to the skillet and cook until browned and cooked through.

Push the chicken to one side of the skillet and add beaten eggs to the other side. Scramble the eggs until cooked.

Add mixed vegetables to the skillet and cook until they are tender.

Add cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps.

Pour soy sauce over the rice and toss to combine. Season with salt and black pepper.

Stir in chopped green onions and cook for an additional minute.

Remove from heat and serve hot.
